Pesto Goat Cheese Egg Bake

Ingredients:

Sarah’s Pesto (see below)
1/2 loaf of French bread (I used baguette.)
2 small tomatoes chopped
12 eggs
1/2 cup milk
1 large log of goat cheese
salt
pepper

Spray a 9′x13′ pan with an even, generous coat of oil spray. Tear bread into small pieces and lay into pan. Spread pesto over French bread. Top with chopped tomatoes.

Cut goat cheese into thin slices. Place in an even layer on top of other ingredients.

Whisk eggs, milk and desired amounts of salt and pepper in large bowl. Pour evenly over ingredients. Cover with tin foil and let sit in the refrigerator for 1 hour.

Pre-heat oven to 350 degrees. Bake for 45 minutes then remove tin foil. Continue to bake for another 15 minutes.

Sarah’s Pesto:

2-3 handfuls of fresh basil leaves and stems
2 handfuls of fresh spinach
2 cloves of garlic
2 tablespoons olive oil
3 roma tomatoes (nubs cut off)
1 handful of pecans or other nut
Salt to taste

Put all ingredients into food processor and blend until smooth.

Serve this dish with crepes and applesauce, bacon, and mimosas. Share with good friends!
