pre-move out meals

I made this meal for Kelsey and I and then again for Paul (first fancy dinner in the new place). Started with some calamari and shrimp, simmered in white wine for about fifteen minutes. Tossed with spinach, basil, chickpeas, tomatoes, olive oil, parmesan cheese, lemon and a dash of sea salt and fresh pepper. Makes a delicious and beautiful summer salad!
